  • 1 cup cream of mushroom soup Consider homemade for added flavor.
  • 1/2 cup milk Any type of milk works.
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • to taste salt and pepper
  • 1/2 cup breadcrumbs Optional topping for a crispy finish.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cooked rice, broccoli florets, cheddar cheese, cream of mushroom soup, milk, garlic powder, onion powder, salt, and pepper.
  3. Mix well until all ingredients are blended.
  4. Transfer the mixture to a greased casserole dish. If using, sprinkle breadcrumbs on top.
Cooking
  1. Bake in the preheated oven for 30-35 minutes, or until bubbly and golden on top.
Serving
  1. Let cool slightly before serving.

Notes

This casserole keeps well in the fridge for 3-4 days in an airtight container. It can be frozen for 2-3 months. Reheat in the oven after thawing. For variations, consider adding cooked chicken or other veggies, or use vegan substitutes to make it plant-based.
