  • 1 lb ground beef May substitute with turkey or chicken.
  • 1 cup onion, chopped
  • 1 clove garlic, minced Browning elevates flavor.
  • 1 cup long-grain rice, uncooked Brown rice can be used; adjust cooking time.
  • 2 cups beef broth
  • 1 can cream of mushroom soup, 10.75 oz
  • 1 cup cheddar cheese, shredded Keep extra cheese on hand.
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 cup fresh parsley, chopped For garnish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. In a large skillet, brown the ground beef, onion, and garlic over medium heat until the beef is cooked through. Drain any excess fat.
  3. Stir in the uncooked rice, beef broth, and mushroom soup. Season with salt, pepper, and paprika. Bring to a boil, then reduce the heat and let it simmer for 5 minutes.
Baking
  1. Transfer the mixture to your prepared baking dish. Cover it with aluminum foil and bake for 25 minutes.
  2. Remove the foil, sprinkle that cheddar cheese on top, and bake uncovered for an additional 10-15 minutes until the cheese is beautifully melted and bubbly.
  3. Garnish with chopped parsley before serving.

Notes

Leftovers keep in the fridge for about 3-4 days. Can be frozen for up to 3 months. Reheat covered in the oven for best results.
