  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup diced tomatoes (canned)
  • 4 oz cream cheese (softened)
  • 1 cup shredded cheddar cheese
  • 1/2 cup chicken broth (low-sodium)

Method
 

Preparation
  1. Cook the pasta according to package instructions until al dente; drain and set aside.
  2. In a skillet, brown the ground meat over medium heat. Drain excess fat if necessary.
  3. Stir in the taco seasoning and diced tomatoes; simmer for 5 minutes.
  4. Lower the heat, add in the cream cheese and chicken broth, stirring until smooth.
  5. Combine the cooked pasta with the sauce, mixing well.
  6. Top with shredded cheese; cover for 5 minutes to melt.

Notes

For serving, consider colorful garnishes such as fresh cilantro, jalapeños, or crushed tortilla chips. Store leftovers in an airtight container in the fridge for up to 3-4 days. This dish also freezes well.
