Preparation
- Cook the pasta according to package instructions until al dente; drain and set aside.
- In a skillet, brown the ground meat over medium heat. Drain excess fat if necessary.
- Stir in the taco seasoning and diced tomatoes; simmer for 5 minutes.
- Lower the heat, add in the cream cheese and chicken broth, stirring until smooth.
- Combine the cooked pasta with the sauce, mixing well.
- Top with shredded cheese; cover for 5 minutes to melt.
Notes
For serving, consider colorful garnishes such as fresh cilantro, jalapeños, or crushed tortilla chips. Store leftovers in an airtight container in the fridge for up to 3-4 days. This dish also freezes well.
