  • 12 oz chicken sausage, sliced
  • 1 cup orzo pasta
  • 2 cups broccoli florets
  • 2.5 cups chicken broth
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 0.25 cup Parmesan (optional)
  • Salt and pepper to taste

Cooking
  1. Heat olive oil in a skillet and brown the sausage slices for about 3-4 minutes. Once they’re golden, remove them and set aside.
  2. Sauté the onion and garlic in the same skillet until they soften and become fragrant.
  3. Add the orzo and toast it for 1-2 minutes to enhance the flavor.
  4. Pour in the chicken broth and let it simmer for 8-10 minutes, stirring occasionally.
  5. Stir in the broccoli during the last 3 minutes of simmering to keep it vibrant and slightly crunchy.
  6. Return the sausage to the skillet, add lemon juice, sprinkle with Parmesan (if using), and mix everything together.
  7. Serve hot and enjoy!

Notes

Store leftovers in an airtight container for 3-4 days or freeze for up to three months. Reheat with a splash of water or broth.
