Ingrédients
  

For the Country Fried Steak
  • 6 cube steaks
  • 2 cups flour
  • 3 tbsp seasoning salt
  • 1 pinch dried thyme leaves
  • 1 pinch dried oregano
  • 1/2 tsp smoked paprika
  • 3 tsp baking powder
  • 1 1/4 cups milk
  • 4 large eggs
  • 2 tbsp Worcestershire sauce
  • 1 dash hot sauce
  • Canola oil (for frying)
For the Gravy
  • 6 tbsp salted butter
  • 1/3 cup flour
  • 2 3/4 cups milk for gravy
  • 1 1/2-2 tsp freshly ground black pepper

Method
 

Preparation of the Country Fried Steak
  1. In a bowl, whisk together flour, seasoning salt, and spices.
  2. In another bowl, mix eggs, milk, Worcestershire sauce, and a dash of hot sauce.
  3. Dip both sides of each cube steak in the flour mixture, then into the egg mixture, and back into the flour.
  4. Heat canola oil in a skillet over medium-high heat. Fry the steaks for about 3-4 minutes on each side or until golden brown.
  5. Remove the steaks and set aside.
Making the Pepper Gravy
  1. In the same pan, melt butter and whisk in 1/3 cup flour for about a minute.
  2. Gradually add 2 3/4 cups milk, stirring continuously.
  3. Add black pepper and allow it to simmer until thickened.
  4. Return the steaks to the gravy, letting them soak up all that goodness.

Notes

Double-dip the steaks for extra crunch. If you prefer a gluten-free version, use almond flour or a gluten-free flour blend. Let the gravy simmer longer for deeper flavor—good things take time.
