  • 2 lbs Potatoes (Yukon Gold), quartered Cut into quarters for even cooking.
  • 1 large Onion, sliced Provides sweetness and depth of flavor.
  • 2 cups Beef Broth (low sodium) Use low sodium to control salt levels.
  • 4 cloves Garlic, minced Enhances the flavor.
  • 2 tsp Fresh Rosemary, chopped Fresh herbs add bright flavor.
  • 2 tsp Fresh Thyme, chopped Another great herb for pot roast.
  • to taste Salt & Pepper Season generously for best flavor.

Method
 

Preparation
  1. Chop the carrots and potatoes into bite-sized pieces.
  2. Optional: Sear the beef in a skillet over medium-high heat until browned on all sides.
  3. Place the seared beef in the Crock Pot; surround it with the carrots, potatoes, and onions.
  4. Pour beef broth over everything until well covered.
  5. Season generously with salt, pepper, garlic, rosemary, and thyme.
Cooking
  1. Cover and cook on low for 8-10 hours or high for 4-6 hours until fork-tender.
  2. Shred the beef in the pot if desired; stir before serving.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 3 months. Reheat in the microwave or stovetop.
