Preparation
- Chop the carrots and potatoes into bite-sized pieces.
- Optional: Sear the beef in a skillet over medium-high heat until browned on all sides.
- Place the seared beef in the Crock Pot; surround it with the carrots, potatoes, and onions.
- Pour beef broth over everything until well covered.
- Season generously with salt, pepper, garlic, rosemary, and thyme.
Cooking
- Cover and cook on low for 8-10 hours or high for 4-6 hours until fork-tender.
- Shred the beef in the pot if desired; stir before serving.
Notes
Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 3 months. Reheat in the microwave or stovetop.
