- In a large crockpot, combine the beef stew meat, beef broth, carrots, potatoes, celery, onion, garlic, diced tomatoes, green beans, thyme, and Italian seasoning.
- Season with salt and pepper to taste.
Cooking
- Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender and the veggies are cooked through.
- Adjust seasonings if needed before serving.
Notes
Store leftovers in the fridge for about 3-4 days, or freeze for up to 3 months. Cool fully before freezing. Reheat on the stove or in the microwave. You can double this recipe if your crockpot is big enough.
