Main Ingredients
  • 1.5 lbs beef stew meat Cut into small, even pieces for uniform cooking
  • 4 cups beef broth Can substitute with vegetable broth for a lighter flavor
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup celery, chopped
  • 1 cup onion, chopped
  • 3 cloves garlic, minced Toasted for depth of flavor
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups green beans, trimmed
  • 1 tsp dried thyme
  • 1 tsp dried Italian seasoning
  • to taste Salt and pepper Adjust seasonings before serving

Method
 

Preparation
  1. In a large crockpot, combine the beef stew meat, beef broth, carrots, potatoes, celery, onion, garlic, diced tomatoes, green beans, thyme, and Italian seasoning.
  2. Season with salt and pepper to taste.
Cooking
  1. Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender and the veggies are cooked through.
  2. Adjust seasonings if needed before serving.

Notes

Store leftovers in the fridge for about 3-4 days, or freeze for up to 3 months. Cool fully before freezing. Reheat on the stove or in the microwave. You can double this recipe if your crockpot is big enough.
