  • 2 pounds beef stew meat
  • 4 cups beef broth
  • 1 cup carrots, chopped
  • 1 cup potatoes, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon thyme
  • 1 teaspoon black pepper

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and garlic, sautéing until translucent.
  3. Toss in the beef stew meat to the pot.
  4. Sear the meat on all sides for that extra flavor boost.
  5. Pour in the beef broth and add the carrots, potatoes, Worcestershire sauce, thyme, and black pepper.
  6. Bring to a boil, then reduce the heat to low.
  7. Cover and simmer for about 90 to 120 minutes, until the beef is tender.
  8. Season with salt to taste before serving.

Notes

This stew is perfect for leftovers; it keeps for 3-4 days in the fridge and can be frozen for up to 3 months. Reheat on the stove or in the microwave.
