Ingrédients
  

For the Meatloaf Layer
  • 1 lb ground beef (85/15 preferred)
  • 1/2 cup plain breadcrumbs Do not skip, helps with texture
  • 1/3 cup milk
  • 1 egg Can replace with a flax egg for a vegan option
  • 1/4 cup ketchup
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
For the Mashed Potato Layer
  • 3 cups mashed potatoes (prepared or leftover) Add a splash of milk if using leftovers to fluff them up
  • 1/4 cup sour cream
  • 2 tbsp butter
  • Salt & pepper, to taste
Topping
  • 1 1/2 cups shredded cheddar cheese
  • Fresh parsley (optional, for garnish)

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and grease a 9x9-inch baking dish or line it with parchment paper.
  2. In a large bowl, toss together the ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and pepper. Stir gently until everything’s just combined.
  3. Spread the meat mixture evenly at the bottom of the prepared baking dish. Bake uncovered for 20–25 minutes.
  4. Warm up your mashed potatoes, then mix in the sour cream and butter. Season with salt and pepper to taste.
  5. Carefully spread the creamy mashed potatoes over the meatloaf layer.
  6. Sprinkle the shredded cheddar cheese evenly on top and bake for another 10–15 minutes until it’s all melty and bubbly.
  7. Let it cool for 5–10 minutes. If you’re feeling fancy, garnish with chopped parsley. Slice, serve, and watch it disappear!

Notes

This dish can be paired with steamed green beans or a fresh garden salad. Leftovers can be stored in the fridge for about 3-4 days, or frozen for up to 3 months.
