Ingrédients

Main Ingredients
  • 1 lb boneless, skinless chicken breasts, cubed
  • 8 oz penne pasta can be whole wheat or gluten-free
  • 1 cup buffalo sauce
  • 1 cup ranch dressing
  • 2 cups low-sodium chicken broth
  • 2 cups fresh spinach or 1 cup frozen
  • 1 cup shredded cheddar cheese or Monterey Jack
  • 1/4 cup green onions, sliced for garnish

Method

Preparation
  1. Prepare your ingredients by cubing the chicken and measuring out all other components.
Cooking
  1. In a large pot over medium heat, add a splash of oil and sauté the chicken until golden brown, about 5-7 minutes.
  2. Stir in the penne pasta, buffalo sauce, chicken broth, and ranch dressing until well combined.
  3. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 15-20 minutes until the pasta is al dente.
  4. Fold in fresh spinach until wilted, then sprinkle shredded cheese on top. Cover for a few minutes until melted.
  5. Garnish with sliced green onions before serving.

Notes

Use skinless chicken thigh for a more tender bite. For extra spice, add more buffalo sauce or a spicy ranch. Stir in cream cheese for a creamy twist. Let the dish sit for a few minutes after cooking to meld flavors.
