Method
Prepare the Meat Filling
- Preheat your oven to 400°F (200°C).
- Heat olive oil in a large skillet over medium heat.
- Add diced onion. Cook until translucent (about 5 minutes).
- Toss in minced garlic and cook for another minute.
- Add ground beef or lamb, breaking it apart. Brown until no longer pink.
- Stir in mixed vegetables and cook for 5 minutes.
- Mix in tomato paste, Worcestershire sauce, beef broth, thyme, and rosemary. Simmer for 10 minutes.
- Season with salt and pepper.
Prepare the Mashed Potato Topping
- Boil potatoes in a large pot until tender (about 15 minutes).
- Drain and return potatoes to the pot.
- Add milk and butter. Mash until creamy. Season with salt and pepper.
Assemble and Bake
- Spread mashed potatoes over the meat filling. Sprinkle with cheese if desired.
- Bake for 20-25 minutes or until golden brown and bubbly.
- Let it cool before digging in!

For added flavor, don’t skip toasting the garlic in the meat filling. It's a game changer!
