Shepherd’s Pie

Ingrédients
  

For the Meat Filling
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 pounds ground beef or lamb
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 cup beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
For the Mashed Potato Topping
  • 4 cups potatoes, peeled and diced
  • 1/2 cup milk
  • 1/4 cup butter
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (optional) For added flavor

Method
 

Prepare the Meat Filling
  1. Preheat your oven to 400°F (200°C).
  2. Heat olive oil in a large skillet over medium heat.
  3. Add diced onion. Cook until translucent (about 5 minutes).
  4. Toss in minced garlic and cook for another minute.
  5. Add ground beef or lamb, breaking it apart. Brown until no longer pink.
  6. Stir in mixed vegetables and cook for 5 minutes.
  7. Mix in tomato paste, Worcestershire sauce, beef broth, thyme, and rosemary. Simmer for 10 minutes.
  8. Season with salt and pepper.
Prepare the Mashed Potato Topping
  1. Boil potatoes in a large pot until tender (about 15 minutes).
  2. Drain and return potatoes to the pot.
  3. Add milk and butter. Mash until creamy. Season with salt and pepper.
Assemble and Bake
  1. Spread mashed potatoes over the meat filling. Sprinkle with cheese if desired.
  2. Bake for 20-25 minutes or until golden brown and bubbly.
  3. Let it cool before digging in!

Notes

For added flavor, don’t skip toasting the garlic in the meat filling. It's a game changer!
